This is another crazy week again ~ what’s new??? So, these menus are not in any sort of order. Whatever I get to that day…. We will be lucky if we have time for something other than cereal…LOL!
Amy’s Anniversary Chicken, rice and green beans
Spaghetti, garlic bread, and salad
Pumpkin Chili, cornbread, apples and apple dip
BBQ Meatballs( I froze this half of the recipe from a couple of weeks ago), rice and broccoli
Mock King Ranch Chicken served over tortillas chips and salad
Yummy Baking this week
2 Tbsp. vegetable oil
6 skinless, boneless chicken breasts
¼ to ½ c. teriyaki sauce
½ c. Ranch dressing
1 c. shredded cheese
3 green onions (chopped)
½ can bacon bits (3 oz can)
1 Tbsp. chopped parsley (for garnish)
Preheat oven to 350’
In a large skillet, heat oil over medium heat. Add chicken breasts and sauté for 5 minutes on each side (until lightly browned).
Place chicken in baking dish.
Brush with teriyaki sauce.
Spoon on Ranch dressing.
Sprinkle with cheese, green onion & bacon bits.
Bake for 25-35 minutes (until chicken is no longer pink & juices run clear).
**I served over rice.
