Green Chili Chicken
You can’t find an easier recipe than this one. Throw frozen chicken breast in the crock pot, 1 can of cream of chicken on top, and last but not least, empty out a can of green chilis into your concoction. Done on high in 4 hours or cook on low for about 6–7.
Serve over brown rice with a salad.
Note: I have a large family, so I use the large can of cream of chicken soup and 2 cans of green chilis.

This is a no brainier…. Not the healthiest, but at least we are getting some food on the table besides cereal. This would be great for a large crowd.
Meatball Subs
Place a package of frozen meatballs in crock pot, pour a jar of spaghetti sauce, and cook on low for about 6-7 hours. However, I have to make 2 bags of meatballs, so I got a bit creative and mixed a jar of alfredo sauce with the spaghetti sauce. Everyone loved it.
Serve in hoagie rolls. I prepared a pasta salad to go with it. So easy.

This was so yummy! Bruiser prepared this one for us….
Salsa Chicken
Place frozen chicken breast in bottom of crock pot, pour a jar of your favorite salsa, mix in 2 envelopes of taco seasoning, cook on low for 6 hours. About 30 min before serving add/mix sour cream(16oz).
Serve over rice
Now just add a salad.
PS ~ Keep in mind I have a large family, so you might want to adjust ingredients to your family size. I cook 7 chicken breast at a time.

Being big, fat, and pregnant with my back giving me fits, I decided that we would try to use the crock pot as much as possible. With the thought that the boys could throw our dinner in the crock pot at noon and I could finish the rest at supper time. The plan has worked marvels for our family. The boys actually love to make the main meal and feel so distinguished that they participated. I just love this plan. Tonight we had the following…….
Beef Stroganuff
Sauteed Spinach ~
I just saute fresh spinach with butter, garlic, salt & pepper, and squeeze fresh lemon at the end.
Pumpkin Pudding
I’ll try to post each crock pot meal we have for the remainder of this pregnancy. Only 3 more months…. I already feel physically disabled….

I haven’t blogged in awhile ~ The pregnancy blues have finally hit! My back has been a problem and I have tried to be on bed rest as much possible. Easier said than done. Anyways, the boys have been preparing our dinner. They made this yummy Ravoli soup. We were going to have a salad, but just served with French Bread was sufficient. Enjoy ~

I surprised the boys with some yummy muffins this morning to start the long awaiting season… Amy gave me the insanely easy secret recipe to these delicious semi healthy treats.. I used real pumpkin that I found frozen in my freezer from last year. I served with vanilla yogurt. No it wasn’t homemade. I’ve been a bit lazy with this pregnancy.

This casserole is a family favorite of my quiver full household of 5 boys and one starving husband. I got it from a friend years ago and still make it today. It’s great for pot lucks or to bring to a family in need. And NO it doesn’t taste like mushrooms for all you shroom haters! It’s delicious!
1 lb ground beef cooked
1/2 bag of egg noodle boiled
1 can of Golden Mushroom Soup
1/2 soup can of water
1/2 onion
1/2 green pepper
pepper and salt to taste
1 1/2 c shredded cheddar cheese
Cook the ground beef with onion and green pepper
drain grease
Mix all ingredients with 1 c of cheddar. Pour in greased casserole dish, cover and bake at 350 for about 30 min. Uncover and sprinkle cheese on top. Bake until melted.
Serve with a salad and garlic bread. Yummy!

Being pregnant, cravings exist. I have a craving for reeces peanut butter cups. So, I came up with a low fat, semi-healthy one. It’s not quite the same, but hits the spot.

Smear the peanut butter on the chocolate rice Cake. Indulge.
